A mineral rather than a spice, yet one of the most important flavors in cooking. Combined with herbs and spices, flavored salts are a vital addition to every kitchen. Salt enhances the flavors of foods-decreases sourness of acidic foods and intensifies the sweetness of sugar. In general, Sea salt is obtained by the solar evaporation of sea or bay water (tidal pools of concentrated saline). Rock salt is mined from the earth’s deposits and purified by a process of boiling and crystallization to various degrees of fineness for cooking or table salt.
Refined purified rock salt without additives: (pure sodium chloride). Kosher salt is slightly coarser & flakier than table salt and has only 280 mg sodium/serving (1/4th tsp.). Kosher refers to the process of fusing 2 grains of salt together to provide rapid dissolution during cooking. Used for pickling, canning & for curing meats.
