"Jerking" is actually a Caribbean style of cooking food in hot skillets over the bonfire. Jerk seasoning is a complex blend of exotic herbs, spices and natural ingredients which is used as a dry rub for pork, chicken, or ribs. Jerk is also used to flavor BBQ sauces and marinades. Apply 1 hr. prior to baking or grilling.
